TIPS FOR MAKING CARAMEL


The caramel process must be watched. Do not walk away. Do not answer the door. Do not begin to empty the top rack of dishwasher. Stay put. Keep watch. Sugar is sneaky. I’ve had the best results without using a candy thermometer, so standing watch in order to see the color change can mean the difference between a smooth result or an over-burnt sticky clump.
Have all the ingredients and tools needed ready to go. Since a watchful eye is required, and the end of the process moves quickly, there won’t be a bunch of time to calmly gather everything.
Avoid stirring. Stirring can trigger crystals to form. Crystals are the enemy of smooth caramel. The recipe below follows the wet caramel technique. Once the sugar dissolves in the water, don’t stir until it’s ready to add other ingredients.
Make sure all tools being used for cooking are clean. Crystals can be triggered by any impurities.
Make sure to use a saucepan/pot that has tall enough sides for the amount to double as it will bubble and foam up toward the end. It will get very hot! So splattering is not a good thing. A heavy-duty, non-coated saucepan or skillet with tall sides will work well.
The recipe below lists refined granulated sugar. Other sugars, like brown sugar, can be used as well, but it can be tricky to get consistent results due to impurities. If you choose to try it with something other than refined granulated sugar, be extra vigilant.

Don’t give up. If you botch a batch, try again! You will learn with each attempt and begin to see the pattern. You’ll become a caramel making champ in no time.

Strawberry Rhubarb Crumb Bars

Strawberry Rhubarb Crumb Bars
Yield: 16 to 20 bars
ingredients
    for the streusel:
  • 1/2 c. unsalted butter, melted, plus room temperature butter for pan
  • 3/4 c. packed light brown sugar
  • 1/4 tsp. kosher salt
  • 1-1/4 c. all-purpose flour
  • for the bars:
  • 1/2 lb. rhubarb, cut into 1/2'' pieces
  • 1/2 lb. strawberries, hulled and sliced 1/4" thick
  • 2 T. light brown sugar
  • 1-1/2 c. all-purpose flour, divided
  • 3/4 tsp. baking powder
  • 1/2 tsp. kosher salt
  • 3/4 c. unsalted butter, at room temperature
  • 1-1/2 c. powdered sugar, plus more for dusting finished bars
  • 3 large eggs
  • 1 tsp. pure vanilla extract
Preparation
Preheat oven to 350°. Butter a 9'' square baking pan and line with parchment paper, leaving a 2'' overhang on 2 sides. Butter and flour parchment paper and pan, tapping out the excess flour. Set aside.
for the streusel:
Whisk together the butter, brown sugar, and salt. Add flour and mix with a fork until large crumbs form. Refrigerate until ready to use.
for the bars:
In a medium bowl, combine rhubarb, strawberries, brown sugar, and 1/4 cup of the flour. In another medium bowl, whisk the remaining 1-1/4 cup of flour, baking powder, and salt. In a large bowl, using an electric mixer, beat butter and powdered sugar until light and fluffy. Beat in the eggs, one at a time. With mixer on low, beat in vanilla, then flour mixture. Spread batter in prepared pan. Top with rhubarb and strawberry mixture, then top with prepared streusel. If you like to have some of the pretty red of the rhubarb and strawberries show on top (I do!), poke a few pieces up through the streusel.

Bake until golden and a toothpick inserted in the center comes out with just a bit of moist crumbs attached, about 50 to 55 minutes. Let cool completely in pan. Run a knife around the edge of the pan and, using the parchment paper overhang, lift cake from pan. Cut into bars and dust with powdered sugar. Serve as is, or with some freshly whipped and sweetened cream...so lovely!

Maude Barlow, the inspiration for Mad Max? 
Ottawa – As Warner Brothers released the trailer for Mad Max: Fury Road, the long-awaited reboot of the 1979 classic about a world deprived of water and oil, you can’t help but notice similarities with a certain Canadian activist who has also shed light on the world’s upcoming water shortage.  
In the trailer, at 12 seconds, a female voice says, “The world is actually running out of water.” It‘s actually an audio clip of Council of Canadians national chairperson Maude Barlow. Right after, another voice says, “...water...water... water wars.” It sounds a lot like Vandana Shiva.
In Blue Gold: World Water Wars, by Purple Turtle films, filmmakers Sam Bozzo, Mark Achbar, and Si Livintoff portray the environmental and political threats to fresh water all over the world. Maude Barlow is seen at the Nairobi Social Forum saying the following (6:16): “I want to talk, comrades and friends, about a global crisis in which we know the world is actually running out of water.” In the trailer, renowned activist Vandana Shiva then concludes, “We have the generation of water wars.”

At the Council of Canadians, we have serious questions about this trailer: Is it foreshadowing that Maude Barlow will, like Mad Max, start her own police force to challenge the lawless gang of private companies wishing to privatize water, making it a commodity out of reach of the many? And more importantly: Is Maude Barlow’s character going to make it into the sequel?
“I dearly hope that life is not imitating art, but alas, we have a lot of work to do to avoid the apocalyptic scenario presented in Mad Max,” says Barlow.
Blue Gold filmmaker Sam Bozzo says he was surprised that the film pulled audio clips from his documentary for the trailer. 
“Their film looks fantastic. I feel saddened that my documentary so accurately predicted our future of water conflict and hope the dire circumstances presented in Mad Max remain science fiction.”
Having successfully lobbied the United Nations to declare water and sanitation a human right, Barlow recently wrote Blue Future: Protecting Water For People And The Planet Forever. In 2008/2009, she served as Senior Advisor on Water to the 63rd President of the United Nations General Assembly and is also the author of dozens of reports, as well as 17 books.

Coconut-Pecan Bars


Ingredients

6 tbsp (90 mL) butter or margarine, softened
1/4 cup (50 mL) granulated sugar
1/4 tsp (1 mL) salt1 cup
(250 mL) all-purpose flour
2 eggs
1 tsp (5 mL) vanilla
1 cup (250 mL) packed brown sugar
2 tbsp (30 mL) all-purpose flour
1/2 tsp (2 mL) salt1 cup
(250 mL) coconut
1/2 cup (125 mL) chopped pecansInstructions

Heat oven to 350ºF. In small bowl, beat butter, granulated sugar and 1/4 teaspoon salt with electric mixer on medium speed until light and fluffy. Stir in 1 cup flour. Pat in bottom of ungreased square pan, 9x9x2 inches. Bake 12 to 17 minutes or until very light brown.

Meanwhile, in medium bowl, beat eggs slightly with wire whisk. Stir in vanilla. Gradually beat in brown sugar just until blended. Beat in 2 tablespoons flour and 1/2 teaspoon salt; mix well. Stir in coconut and pecans. Carefully spoon coconut mixture evenly over baked layer.

Bake 20 to 25 minutes or until golden brown and filling is set. Cool 10 minutes. Run knife around edges of pan to loosen. Cool completely, about 1 hour. For bars, cut into 4 rows by 4 rows.Special Touch: Add a new shape to your cookie tray. Cut bars diagonally in half to make 32 triangles.

Lemon-glazed lavender shortbread cookies

These sophisticated shortbread cookies are a wonderful pairing of citrus and herbs.


Ingredients
  • 1 cup unsalted butter
  • 2 cups all-purpose flour
  • 1/2 cup superfine sugar
  • 1/4 tsp salt
  • 2 tbsp dried lavender
  • 1 cup icing sugar
  • 1/4 cup freshly squeezed lemon juice

Directions
1 Cream the butter with an electric mixer until fluffy. Stir in the flour, sugar and salt; beat on low speed for 1 minute. Add the lavender, beating until just incorporated.

2 Transfer the dough onto a floured surface and roll to a 1⁄4" thickness. Cut out the cookies using a round cookie cutter and place 1" apart on a greased baking sheet.

3 Bake on the centre rack of a 300°F oven for 20 minutes; let cool.

Make the glaze by whisking the icing sugar and lemon juice together. Spoon about 1 teaspoon of the glaze over each cookie, spreading to cover the whole surface. Let set for 30 minutes to 1 hour before serving.

Makes 36 cookies.
